Angola is represented by Cachupa! Very delicious and perfect for a cloudy day. It took a little longer to pull off as sourcing ingredients required a bit of research to locate. I am enjoying expanding my knowledge of local supermarkets. Hominy required a couple of stops to locate but I am so glad i found it for this recipe. I had never cooked with it before and picked up enough to experiment with - so good! This recipe luckily yielded lots of leftovers! Looking forward to lunch tomorrow. <br>
