Black Chung cake is a distinctive type of Chung cake made by the Tay ethnic people in Bac Ha district, Lao Cai province. Traditionally prepared only for Tet (the Lunar New Year), it has now gained popularity and has become a sought-after delicacy among tourists visiting the region.

I steamed up some #clams before midnight
Ate bunch of them with chili nuoc cham sauce with lots of lime juice added. These ones are from up island - bought from local vendor. They're littlenecks & manillas - really common on our island beaches.
I'm going clam digging & oyster harvesting next week - up island.

Made my Mom some Vietnamese style pork & shrimp with rice noodles salad rolls for her lunch. Mint, lettuce & cucumbers are from our backyard garden.
Made Vietnamese Bò Kho. It's a traditional hearty Vietnamese beef & carrot stew. A very popular comfort food from Vietnam. People usually eat it with some noodles or baguette(for dipping).

Vietnamese call all traditional salads, goi. They're usually made with green mangos, green papaya or banana blossoms. They call non-traditional, leafy greens salads, sa lát, which translates to, salad. We eat both types. We love salads & soups - almost equally.

Our #dinner tonight was #BanhUotKho - cut up & steamed #RiceNoodle rolls (that have minced green onions & dried shrimp it it), with sliced #VietnameseSausage roll, fresh chopped #cucumbers, garnished with fried dried onions & drizzled with chili nuoc cham sauce.
Went out to Pherm Brewing in Gambrills, MD earlier today. They had a new Mango Habanero IPA out, and I wanted to try out the Pho Wheels food truck too.
I had a few small pours, and a full pour of the Caspian (mango habanero IPA that I wish had a bit more heat) and their Forbin (American IPA).
Pho Wheels was down right fantastic. I got their Banh Mirria (Banh Mi and Birria fusion), and their tacos with a fried egg on each.
@Zarf joined me on the latter half of the visit. Great times.

Mercy me. Bó Kho is one of my new favorite things. Stew beef (or brisket) marinated in fish sauce, garlic, ginger, Chinese 5-spice, and brown sugar then stewed in broth, soy sauce, sautéed onion, garlic, lemongrass, carrots, various red pepper powders, and chili oil.
