El Salvador is represented by Maria Luisa (a cake filled with custard and topped with a glaze and red sugar). More custard! Another technique and recipe. I am enjoying exploring the variations. I am less a fan of cornstarch-based custards/puddings, and I am torn between avoiding recipes that use them or modifying the recipes. This is country 53, and obviously there have been some ingredient substitutions along the way but I generally try to stay as close to the technique and ingredients as I can. Something to ponder!<br>
