CENTER OF THE GALAXY

½ oz lime juice
½ oz demerara syrup
½ oz honey syrup
½ oz raspberry liqueur
2 oz Blended Aged Rum ❸
pinch of grated cinnamon

Garnish: raspberries, lime wheel
Method: Combine all the ingredients in a cocktail shaker filled with cracked or cubed ice. Shake and double-strain into a chilled coupe. Float a lime wheel in the center of the drink and rest a raspberry in the center.

Named after an ester discovered in a dust ball scanned by the Max Planck Institute of Radio Astronomy in 2009, which smells of rum and gives raspberries their taste! Spec is by Martin Cate, Smuggler's Cove p121.

@saltphoenix @BroGle well done! #Permaculture! Agree. We are lucky to have hunters and gatherers who share what they harvest on the farm. One cull cow fills freezers for years and plenty to share. Blueberries. Need to replant asparagus. Okra never disappoints. Herbs. Potatoes sweet potatoes. Daughter experimenting with lots of different beans and seed saving. Haricots verts. #Honey from others. Our big input costs: hay, diesel, repairs, tires.

Day 26 of 30 Days of Local Food: Nith Valley Apiaries

When I read about the adulteration of those convenient, cheap, (and sometimes cute) bottles of honey, I switched to locally-produced sweet stuff. When I’m not gifted with a jar from a friend’s hives, I turn to Nith Valley. Part of the local sustainable food system they’ve been around since 1918 and now have hives dotting the swath of territory including Perth and Oxford Counties and Waterloo Region. I prefer their unpasteurised liquid honey, but I cannot turn down their strawberry creamed (mixed with butter and sprinkled with salt and black pepper, on toasted seedy bread).
