Be good to your mouth and tastebuds AND gut (microbiome) - konnyaku
tazuna style - rinsed, boiled 2 mins, strained, microwaved dry 1min then in hot dry pan for 2 mins till some squeaking, then add a bit oil, touch of sesame oil, sear blister konnyaku, add sake + soy (2T each), 1 T sugar, some dry red chilli, simmer till syrupy, mix to coat, add a bit of bonito flakes, mix, some sesame seeds and that's it! Enjoy!

Edit: It's not milk. It's a milk replacement based on oat.

I made a new discovery ... imported Thai Birds Eye chilis in the UK. These are NOT what the supermarkets will label and try to sell you - which are actually Prik Jinda or Thai Jinda chilis. See the second image, yes this is a hill I will die on
Also, a Thai Jinda chili is 50-75K SHU, a real birds-eye chili is 90-120K. These are notably hotter
So ... I snapped up a bag. I'm a sucker for trying authentic ingredients!

Update this morning, the rausu kombu has expanded considerably more than the other 'regular' dashi kombu I get here (Wel-pac brand; product of Korea). Taste wise the later is quite nice really, soft and comforting - the rausu has a bit more fresh crispness too.
